My research interest in food science and nutrition is driven by the urgent need to bridge the gap between food production and health outcomes. My primary focus is on functional foods and the development of bioactive compounds, especially how we can manipulate food processing to enhance the bioavailability of essential micronutrients and antioxidants. I am particularly interested in Food as medicine philosophy exploring how traditional diets and plant-based ingredients can be scientifically validated to prevent chronic lifestyle diseases like type 2 diabetes and hypertension.
